Tutti Fruity Muffin
Ingredients
- MFM Self-Raising Flour – 375g
- Baking Powder – 2 tsp
- Butter (room temperature) – 250g
- Sugar – 438g
- Eggs – 4
- Full Cream Milk – 310ml
- Mixed Berries – 100g
Method
- Preheat the oven to 180°C and line a muffin tray with paper cups.
- Sift the flour together with baking powder and set aside.
- Using an electric mixer, cream the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. - Add the flour alternately with milk, ending with flour, and mix until smooth.
- Fold in the mixed berries until evenly distributed.
- Fill the paper cups to ¾ full with batter.
- Bake for 20–25 minutes until fully cooked and lightly golden.
Steps to Make Tutti Fruity Muffin
Step 1: Prepare the Oven & Tray
Preheat the oven to 180°C. Line a muffin tray with paper cups.Step 2: Prepare Dry Ingredients
Sift MFM Self-Raising Flour and baking powder together. Set aside.Step 3: Cream Butter & Sugar
Using an electric mixer, beat butter and sugar until pale and fluffy. Add eggs one by one, mixing well after each addition.Step 4: Combine Batter
Add the flour alternately with full cream milk, ending with flour. Mix until smooth.Step 5: Add Fruits & Bake
Fold in mixed berries gently. Fill paper cups up to ¾ full and bake for 20–25 minutes. Allow to cool before serving.
